Pita Bake

This delicious pita bake is a healthy alternative to pizza! In this recipe, almost every standard ingredient used for pizza is replaced. The pizza dough is replaced with whole wheat pita bread, tomato sauce is replaced with sun dried tomato pesto and chopped plum tomatoes, and the toppings consist of spinach, Parmesan cheese, feta cheese, and mushrooms.

 

 Ingredients

  • 4 Pitas

  • 6.75 oz. Sun-dried tomato pesto

  • 1 Cup Parmesan cheese

  • 0.5 Bag spinach

  • 5 oz. Feta cheese

  • 4 Mushrooms

  • 1.5 Plum tomatoes

Instructions:

  1. Spread the sun-dried tomato pesto on top of the pita bread.​

  2. Top with the diced tomatoes, chopped spinach, and sliced mushrooms.

  3. Sprinkle both cheeses on top.

  4. Bake in the oven at 350°F for 10-12 minutes. 

Banana Ice Cream

This ice cream's main ingredient is frozen bananas. In this recipe, you take frozen ripened bananas and put it in a food processor until it has the consistency a soft serve ice cream would have. You could eat it plain or even mix your own custom flavors by adding fruit like strawberries and blueberries, or add peanut butter, chocolate chips, or unsweetened cocoa powder.

Ingredients

  • 2-3 Bananas

  • 1/4 cup milk (Optional)

  • Toppings

Instructions

  1. Let the bananas ripen until their peel starts to turn brown.

  2. Cut the bananas into small pieces and freeze them.

  3. Blend the frozen banana pieces into a food processor or blender until it has a soft serve consistency. (If the bananas are difficult to process, add up to 1/4 cup of almond, soy, or regular milk).

  4. Once the texture is reached, remove the ice cream into a container and mix in any toppings if desired.

  5. Freeze for an additional 30 minutes.

Turkey-Spinach Burgers

Ingredients

  • 4 cups of spinach

  • 4 sliced scallions

  • 1 clove of garlic (finely chopped)

  • ¾ tspn ground cumin

  • Kosher salt to taste

  • 3 tbsp olive oil

  • 12 slider buns or dinner rolls (toasted)

  • Mayonnaise

  • Red onion

  • Pickle slices

 

Instructions

  1. Combine the spinach, scallions, garlic, cumin, salt, pepper and turkey in a bowl.

  2. Form ½ inch thick patties.

  3. In a skillet, heat the oil and cook the patties until they are golden brown.

  4. Serve the turkey-spinach patties on buns with condiments.
